During summers, our garden zucchinis would grow out of control, leaving us with lots of zucchini bread and, luckily, fried zucchini too. The best way to prepare this Southern treat is with cornmeal, which adds crunch and flavor to the breading.
Ingredients:
– 2 medium-sized zucchinis
– 1 cup cornmeal
– 1/4 cup all-purpose flour
– 1 teaspoon salt
– 1/2 teaspoon black pepper

– In a large skillet or frying pan, pour vegetable oil until it’s about 1/2 inch deep. Heat the oil over medium-high heat until it reaches 350F (175C).
– Carefully add the coated zucchini slices to the hot oil in batches, avoiding overcrowding.
– Fry each side for approximately 2-3 minutes, or until they acquire a mouthwatering golden brown hue with a delightful crunch.

6. Prepare the Optional Peppered Dipping Sauce:
For an extra zesty kick, mix ketchup with a pinch of cayenne pepper or chili powder to create the tantalizing peppered dipping sauce.
